April 19, 2010 Potluck Meeting

Hello all! We had a Potluck Meeting last night at the USO. For those that were there, thank you so much for coming! For those that couldn't make it, I hope to see you at our next meeting!

We had a great meeting! We shared some great food (a couple recipes to follow), we packed up some leftovers for Brandon and Lauren Newman (who just had a baby last week), we discussed the blog (www.vipersfrg.blogspot.com), discussed the Officer Positions and Functions, discussed our expectations/desires for future meetings and events, and discussed fundraising ideas. We also had a guest speaker from the USO.

Those that were interested in volunteering, thank you so much! I will be sending out a separate email soon with information on an Officer Meeting. At the Officer's Meeting, we will be going over the functions/roles/responsibilities of the positions you are volunteering for, brainstorming/planning future meetings and events, etc. If you did not get a chance to volunteer, but are still interested, please email me for information, we would love to have you at our Officer's Meeting.

If you haven't done so, yet, please become a follower on our blog. We will be posting information on upcoming events for HSL-48, FRG, USO, and NS Mayport, as well as other Jax events of interest.

  1. I have a couple recipes to share from the meals shared at Monday's Meeting. Cheeseburger n Fries Casserole and Chicken Casserole. I will post separate comments with each recipe. If you brought a dish but were not able to bring the recipe, please post it below. Thanks and Enjoy!

  2. Cheeseburger ‘n’ Fries Casserole


    1 - 2 lbs ground beef (I use venison)
    1 can cream of chicken soup, undiluted
    1 can cheddar cheese soup, undiluted
    1 pkg (20 ozs) frozen crinkle-cut French fries (I just eyeball it)
    Bacon Bits and Shredded Cheese (optional)

    In a skillet, cook the beef over medium heat until no longer pink; drain. Stir in soups (and bacon bits, if desired). Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Arrange French fries on top. Bake, uncovered, at 350˚ for 50-55 minutes or until the fries are golden brown. If desired, cover with shredded cheese for the last 10 minutes of cook time.

  3. Chicken Casserole


    4 Large Chicken Breasts
    2 can cream of chicken soup
    16 oz Sour Cream
    1 Tube of Ritz Crackers
    2 TBSP of Margarine

    Place the chicken breast in a large pot and boil until well done. This will take about 20 minutes depending on the thickness of the chicken. When the chicken is done cut the chicken into small pieces. The longer the chicken cooks, the easier it will be.

    After the chicken is cut up, place it into a 9x13 in casserole dish. Take the cans of cream of chicken soup and the sour cream and combine them over a low heat. I use the pot that I boiled the chicken in. While that is heating up, preheat the oven to 350 degrees and take the package of Ritz and crush them into small pieces. An easy way to accomplish this is to use a Ziploc bag. After this is done, melt the margarine and pour it evenly over the crumbs while stirring them.

    Take the cream of chicken and sour cream mix when it starts to bubble and pour it over the chicken in the casserole dish. Then take the crumbs with the butter and spread it over the mixture. Bake it in the oven for about 20 minutes or until you see the casserole start to bubble. Take it out and let it sit for about 5-10 minutes to cool and set.
